Beef and Pork Whole Animal Buying Guide This resource, produced by the Small Meat Processors Working Group of the Value Chain Partnerships project, is for consumers who want to buy pork and beef as whole animals (or portions thereof) from local producers. It explains marketing terms, information on storage and handling, meat inspection, meat cut out weight and color photos of common retail beef and pork cuts. Supported by the Value Chain Partnerships project, USDA Sustainable Agriculture and Research Education program, ISU Extension, W.K. Organic Marketing Resources Fact sheets produced by the Midwest Organic and Sustainable Education Service (MOSES) are for organic producers interested in marketing. Topics include organic grains, marketing organic meat and dairy products to parents of young children, and a resource directory of marketing and certification agencies, seed suppliers, buyers, processors and other resources in the Midwest. Publications can be downloaded at the MOSES web site.
