Connecting producers and consumers of goat meat in Siouxland: Marriage made in heaven or star-crossed lovers?

Goat meat is the most consumed meat in the world, U.S. demand for goat meat outstrips supply, and goat is linked to emerging ethnic populations throughout the United States, including Iowa and surrounding Midwestern states. Drawing upon our research results (to date) in our project ("Assessing the Market Potential for Goat Meat among Recent Immigrants to Siouxland") in the Sioux City area, we will engage participants in an exercise helping us connect Iowa producers of goat meat to consumers via alternative ways of configuring the value chain.
