Supply chain management for Iowa regional food systems [M2015-11]

Project Description: 

Investigators will work with two food hubs in Iowa and one logistics provider to apply supply chain management and food safety principles and methodologies to their operations. Partners include the Iowa Food Hub in Decorah, the Iowa Food Cooperative in Des Moines and FarmTable Procurement based in Harlan, Iowa. They will analyze inbound and outbound logistics and aggregation/staging activities to maintain food safety and quality and increase efficiency. They will document what they learned and share with regional food system practitioners as well as related programs at ISU.

Lead Investigator Bio: 

Caroline Krejci is an assistant professor in Industrial and Manufacturing Systems Engineering at Iowa State University where she teaches systems engineering and analysis and systems design. She specializes in food supply chains and served as a research assistant on a sustainability framework project at the University of Washington where she received her Ph.D. in industrial engineering. She has degrees from Purdue and Bradley, and has worked as operations engineer at Lutron Electronics in Pennsylvania and industrial engineer at United Parcel Service in Indianapolis.
